The rain is falling still. The pitter-patter of raindrops make a lovely sound when it hits the windows of the cottage. I enjoy rainy days. They make me feel cozy and comfortable. Three years ago, the rain caused our little town to be flooded...not an experience I care to repeat. The river is not high as of yet, but I don't worry. Our Lord is present midst this situation, so I leave it up to HIM.
Thank you Sweet Friends, for your kind words in regard to the goodies I shared on my last writings. I have to share, that baking for me is a great joy. When I stopped, I felt quite saddened by the prospect of never tasting what I made again. But now, well, I am thoroughly enjoying myself...
Today, I needed to use the last of the strawberries. Our strawberry patch has been very fruitful this year, and I promised J. that I would make more goodies with them.
Today, I felt like making ... berry~berry crisp! If you have made apple crisp, then you could make this recipe. It came out delicious!
I mixed strawberries with raspberries, added raw sugar instead of white, cinnamon and mix it well. Then the topping was made with whole wheat pastry flour instead of white...the rest is just the same as what you would use for an apple crisp. Bake it at 350 degrees for 30 minutes. Let it cool and enjoy!
A nice warm cup of tea...and is perfect for a rainy afternoon :) .

You have kindly asked for me to share the recipe for the chocolate cake... and here it is. I took it from this book...
This book has such great recipes, that I went ahead and ordered from Amazon. The cake is called: Mix in the pan chocolate cake. The easiest cake I have ever made. There are many recipes of this cake online...and they do differ from each other. I took the one from this book and modified it for my taste. Here is what I used...
Chocolate Cake
1 cup of whole wheat pastry flour
1/2 cup of unbleached white flour
1 teaspoon of baking soda
1/2 cup of unbleached white flour
1 teaspoon of baking soda
1 cup of raw sugar
1/4 cup of unsweetened cocoa powder
1/2 teaspoon of sea salt
1 cup of semi-sweet dark chocolate chips
1 tablespoon of white vinegar
1 teaspoon of real vanilla extract
1/3 cup of canola oil
1 cup of warm water
Preheat oven to 350 degrees.
A 8 inch square pan - which I did not grease because I serve it out of the pan.
Even though some would mix everything in the baking pan, I chose not to do so. I combined the flour, the baking soda, the sugar, the cocoa, the chips and the salt in a separate bowl. I used a whisk to mix it well. Then I added the vinegar, the vanilla and the canola oil to the mix. Pour the water and mix well. Lumps will form, this is OK. Transfer to the baking pan and bake the cake for 30 minutes or until toothpick inserted in the pan, comes out clean.
It is a very easy cake to make. 5 minutes to prepare. Make sure you have all your ingredients handy and ready to mix. Enjoy!
